As a startup originating from the University of Tsukuba, our company is promoting the social implementation of personalized food solutions for the elderly, using everyday eating-related data collected through AI and wearable devices. Japan’s aging rate has reached 29.3%, and challenges related to nutrition and the increasing social burden of elderly care have become evident. In the market, the production value of foods designed for nursing care has been expanding year by year. In addition, Japan’s Ministry of Health, Labour and Welfare (MHLW) is developing integrated initiatives that combine nutrition, oral health, and rehabilitation, and the overall environment surrounding the industry is becoming more supportive.

This lecture will present the latest trends and developments in personalized food design for older adults. Topics will include evidence-based evaluation using AI-enabled wearable devices (such as non-invasive neck-mounted sensors), the integration of clinical and dietary data, and collaboration models between university-originated startups and major corporations. The discussion will also touch on the social burdens and risks related to food and nutrition in an aging society.

Speaker: Mr. Tomoya Shimokakimoto, Vice President & Co-Founder, PLIMES Inc.

Mr. Shimokakimoto holds a Doctor of Engineering and a Master’s in Medical Science from the University of Tsukuba. He has been engaged in R&D related to biomedical engineering and rehabilitation. His career includes serving as a Research Fellow of the Japan Society for the Promotion of Science (JSPS), a Visiting Researcher at the Technical University of Denmark, and a Researcher at the University of Tsukuba. Since co-founding PLIMES in 2018, he has been responsible for business strategy, finance, administration, legal affairs, domestic and international business development, R&D, and networking with medical professionals.
